Elvire van Leeuwen-Smith, after
an intensive 5 year schooling in Amsterdam in the art and science of chocolate-making, obtained her
certification as a Chocolatier, Pastry Chef and Food Scientist from the Dutch Government. Elvire then worked
with the founder of well-known chocolate shops (25 shops) in Amsterdam, formulating innovative recipes. The
motif of these upscale shops was to create the most delicious chocolates made only of natural and pure ingredients,
a tradition that has been carried through to Dutch Chocolates (USA), Dutchocolates Pty Ltd© (Australia) and now to
Boomerang Chocolates©
In 1998 Elvire was contacted by a very large company in Australia that wanted to distribute her
chocolates throughout the country. Samples were sent over for tasting, and as a result a trip was undertaken to
Australia to meet and discuss this opportunity. The decision was made to come to Australia, set up a company and
manufacture her unique chocolates. Thus, after arriving in Australia, the company was founded February 2001 as
Dutchocolates and in late 2002 after development of the new Australian Native Bush flavours Boomerang Chocolates
was formed.

Elvire has over 20 years experience in chocolate formulation and chocolate making in Holland, the USA and
Australia. Her speciality is making bonbons, using only pure and natural ingredients. (See
Pure Ingredients). Elvire has extensive training, schooling, credentials and
experience in chocolate making and is available for lectures and teaching. |
